Bikini Recipe

Yields 10 guests

For the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Drink (yields 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Cordial: Combine the listed items into a pan, heat until it reaches a gentle boil, stirring so the sugar melts. After that, turn off the stove and leave to cool fully. Decant to a clean bottle, seal and store in the fridge, where it will keep for about four weeks.

Preparing the Cocktail Base: Pour all the liquids into one large bottle, let it rest for an hour, then pass it through best through a fine cloth, making it perfectly clear.

To serve: Add 85ml from the cocktail base into a stirring glass packed with ice, and agitate carefully for about 60 seconds until cold. Pour into a frosted cocktail glass or equivalent, decorate with a few cranberries and finish with a light spray with the mandarin essence over the top.
